This recipe also comes from my Cooking with Mickey around our world cookbook, the book notes that they served these corn muffins at Pioneer Hall at Fort Wilderness, the Farmers Market at The Land in Epcot Center, and also they were once served at Columbia Harbor House located at Liberty Square in the Magic Kingdom.  Although the recipe may have changed over the years, I expect that this recipe will yield good results.  They serve up some tasty corn bread at the Hoop Dee Doo dinner show as well as at Trail’s End Restaurant.

~ Corn Muffins ~

2/3 cup sugar

2 cups all-purpose or bread flour

1 teaspoon salt

1/2 cup shortening

1 tablespoon baking powder

1 teaspoon vanilla extract

3/4 cup yellow cornmeal

2 eggs

1 1/3 cups milk

Yield: 18 muffins

Combine sugar, salt, shortening and vanilla in a bowl and mix with an electric mixer for 5 minutes until slightly creamed.  Add eggs one at a time and beat for 3 minutes after each addition.

Mix flour, baking powder and cornmeal well.  On low-speed add half flour mixture and half milk and beat just to blend.  Add remaining flour mixture and milk, and beat just to blend.  Spoon into paper-lined cup cake pans and bake at 400 degrees F for about 20 minutes.
