Another fun recipe from my retro Cooking with Mickey around our world cookbook, that looks easy to make and that would be great with fresh fruit, especially strawberries, bananas, and pineapple that go so well with coconut.  Personally, I would modify this recipe to use a low fat or fat free sour cream to better suit our dietary needs, but I haven’t altered the original recipe – below.  This sounds like a great recipe for kids to get them helping in the kitchen, and a nice way to get them interested in trying various fruits with the dip they helped make!

~ Coconut Dip ~

2/3 cup dairy sour cream

1/3 cup coconut cream

1/3 cup brown sugar

Yield: 1 1/3 cup

Mix together sour cream, coco lopez and brown sugar.  Use as a dip for fruits such as orange sections, fresh pineapple spears, fresh figs, apricots, or banana slices.
